The antioxidant diet or O2 Diet is based on the ORAC (Oxygen Radical Absorbance Capacity) scale which was developed by the USDA. This is a measure of foods which protect against free radicals. Foods that are high on the ORAC list are colorful fruits and vegetables, healthy fats and yes, chocolate antioxidant is a fact. The O2 Diet also encourages regular exercise for overall health. There are many additional antioxidant products available to supplement this diet.

Antioxidants are molecules which attack free radicals. Free radicals are unstable molecules with an unpaired electron. As they take electrons from other molecules they damage normal cells. Damage caused by free radicals is called oxidation. Oxidation has been linked to many diseases including heart disease, stroke, atherosclerosis, arthritis, cancer, cataracts, macular degeneration, immune suppression, Alzheimer's and aging in general. Free radicals occur naturally in the body. Additional free radicals are generated in the body by stress, environmental toxins, smoking, alcohol, anesthetics and radiation.

Antioxidants are also made naturally by the body. Fruits and vegetables are a main source of antioxidants but many herbs contain antioxidants as well. Some herbs, such as Oregano, are very rich in antioxidants. So sprinkle on plenty of basil, dill, ginger, oregano, parsley, rosemary, sage, tarragon, thyme and turmeric.
